A visit to our favorite RV campground in Salt Lake City, Utah, brings the opportunity for a much anticipated visit with the Cardenas family at one of their three local restaurants, Red Iguana.  This family owned establishment employs about 150 people who serve up unique variations of authentic Mexican cuisine, most notably dishes with mole.  After setting up our RV in its spot, we make our first attempt to dine at the restaurant, but the prediction of an hour wait is beyond our capacity to ignore our rumbling stomachs.  Too much driving that day.  We opt to come back the following day for a late lunch and find the wait time and our stomachs more manageable.  We seat ourselves in the outdoor wait room and chat with fellow diners, many of whom are new to the restaurant like us. 

The hostess provided us with menus and suggestions to whet our appetite.  She directed our attention to their signature dishes featuring a variety of mole sauces.  With her encouragement, we learned that you can ask the wait staff for a sampling of all the mole sauces to help determine a menu selection. 

Once seated inside the traditionally colorful room, we marveled at the celebrity photos and testaments of those who had come before us.  From Food Network favorites to reality show characters, to musicians, the list heightened our expectation. 

        

We pondered the options and ate the chips with salsa, finally settling on two mole dishes; one with beef that included some good heat, and the other, a pork tenderloin selection with a mole sauce including cinnamon, cumin, and topped with nuts.  We sampled and ate with delight.

The Cardenas family story starts fifty years before with parents and grandparents serving Mexican food locally in various restaurants.  By 1985, the family began the Red Iguana legacy that now features two full size restaurants and a kiosk venue.  For us, the experience was fun and worth recommending to RV readers.  Buen Apetito!

 

Going down the Rogue River in Oregon on the Hellgate tour was a thrill!  We took the whole family for the dinner cruise.  Good food and plenty of splash from the 360 degree boat turns afterward.  It was a day to remember.  Thanks for the tip!
